At the age of 14, Jasper Newton, better known as "Jack" Daniel, bought his first still from Dan Call, a local priest and whiskey distiller. Daniel sold the first home-made whiskey in the neighborhood. In 1866 he acquired land near Lynchburg in Tennessee and built his first distillery there, the Jack Daniel Distillery.
Today Jack Daniel`s is one of the largest distilleries in the world with 74 maturing cellars that hold 1.6 million barrels. But it is certainly not this gigantism that gives the so-called "Jack" its unique character and its distinctive aromas. Unlike his Kentucky cousins who produce bourbon, Jack Daniel's follows the Lincoln County process, a unique process in which the distillate is passed through a layer of maple charcoal before it is poured into the barrel. This allows the heaviest elements to be retained and promotes the homogeneity of the distillate.
